Dulse & Sundried Tomato Dip
Dulse is a deep red seaweed gathered along cold northern shores and carries a naturally savoury, almost smoky flavour that lends itself well to slow, sun-driven ingredients. Here, it’s blended with sundried tomatoes and sweet red pepper into a dip that feels quietly indulgent. Serve it with crackers or raw vegetables as an appetiser, fold it through warm pasta with a little cooking water, or spread it beneath avocado on toast. A small, versatile paste that brings a hint of the coastline into everyday cooking.
Instructions
- Soak the dried dulse in cold water for 10–15 minutes until softened.
- Remove any thick roots if present, and cut the dulse into smaller pieces.
- Add the dulse along with all remaining ingredients to a food processor.
- Blend until smooth.
- If needed, add a little more olive oil to adjust the consistency.
- Serve as a spread on crackers, or use in pasta, or as a base for avocado toast.
